Simple, healthful and gluten-free salad that the whole family will enjoy!
Quinoa Tabbouleh Salad
Serves 4 to 6
What you’ll need:
1 cup cooked quinoa
3 tomatoes, diced
¼ cup fresh Italian parsley, coarsely chopped
¼ cup mint, coarsely chopped (apple mint works great if you have it)
3 cloves garlic, finely minced
1 small red onion, diced
3 to 4 Tablespoons virgin olive oil
Salt and pepper to taste
Steps:
- Cook quinoa following cooking instructions on package. Quinoa cooks similarly to rice.
- Combine ingredients in a medium sized bowl and toss gently.
- Refrigerate for at least 1 hour, tossing occasionally to combine flavors.
- Serve chilled.
